  • 2 rosemary sprigs
  • Half a lemon

Heat oil in a large, flameproof skillet. Season the chicken pieces and brown them for 10 minutes. Take it out and keep it aside. Drain fat from pan – there should be about 75ml (3fl oz). Pour only 1 tbsp of oil back into the pan and drain off the rest. Preheat the oven to 200ºC (180ºC fan oven) mark 6.
