  • Butter: Don’t let the melted butter cool too long, or your dough will be crumbly instead of soft (and your cookies will be too puffy). You want it to still be slightly warm. Salted butter can be used instead. Reduce the salt in the cookie dough to 1/4 tsp.
  • Egg and egg yolk: Room temperature egg + egg yolk is best. Generally speaking, if a recipe calls for room temperature or melted butter, it’s good to use room temperature eggs as well. To quickly bring eggs to room temperature, place whole eggs in a glass of warm water for 5 minutes.
  • Can I add nuts or other add-ins? Yes of course. You can add just about anything, including chopped nuts, M&Ms, white chocolate chips, dried cranberries, chopped peanut butter cups, and more, as long as the total amount of add-ins is about 1 – 1 and 1/4 cups.
