How To Make lemon drizzle cake
INGREDIENTS:
Cake ingredients:
- 250 g Unsalted butter Plus extra for greasing your tin. See rates.
- 250 g Caster sugar See notes.
- 4 Eggs Medium. See notes.
- 250 g Self-raising flour
- 3 Lemons Zest only. (Reserve the zested fruit for the juice for the drizzle.) See notes.
For the drizzle:
- 100 g Icing sugar
INSTRUCTIONS:
- Preheat the oven to 160C and grease your loaf tin and line it with baking paper.
- Place all cake ingredients in a large bowl and beat until smooth.
- Grease the prepared tin with a spoon. Bake for 40-50 minutes or till a skewer comes out clean.
To drizzle:
- While the cake is still hot in the tin, poke holes all over it using a skewer or thin sharp knife.
- Make a thin paste by adding icing sugar to lemon juice. Add liquid slowly so it stays nice and smooth. (This is usually one and a half lemons, but will depend on how large and juicy they were!)

- Butter: I prefer to use unsalted butter for baking because it’s flavorless. If you have added only salt then it will be fine. this is not important.
- Caster Sugar: If you have golden caster sugar then it works well for you.
- Eggs: Free Range Please! If you want to be precise and ensure success, weigh them in their shells and they should total around 250 grams.
- Lemon: If you can buy a lemon without wax, it’s best because you’ll be eating the peel.
