How to Make Tiramisu Recipe

Make the filling: Cook the egg yolks, sugar, and milk until slightly thickened. Let cool slightly, then refrigerate for about an hour. When the filling is completely cool, mix in the mascarpone cheese.
Make the whipped cream: Beat the heavy cream with the vanilla extract until stiff peaks form.
Soak the Lady: Combine coffee and rum in a small bowl. Pour the mixture over the bhindi cut in half lengthwise.
Assemble the Tiramisu: Place the soaked ladyfingers in the bottom of a baking dish. Spread half of the mascarpone mixture over the ladyfingers, then spread half of the whipped cream over it. Repeat in this sequence. Dust with cocoa powder.
Ingredients:
- 6 large egg yolks
- ¾ cup white sugar
- ⅔ cup milk
- 1 ¼ cups heavy cream
- ½ teaspoon vanilla extract
- 1 pound mascarpone cheese, at room temperature
- ¼ cup strong brewed coffee, at room temperature
- 2 tablespoons rum
- 2 (3-ounce) packages of ladyfinger cookies
- 1 tablespoon unsweetened cocoa powder
Directions:
- In a medium saucepan, beat egg yolks and sugar until well blended.
- Whisk in the milk and cook over medium heat, stirring constantly, until the mixture comes to a boil.
- Boil gently for 1 minute, then remove from heat and let cool slightly.
- Cover tightly and chill in the fridge for 1 hour.
- In a medium bowl, beat cream and vanilla with an electric mixer until stiff peaks form.
- Remove egg yolk mixture from refrigerator; Add mascarpone cheese and beat until smooth.
- Combine coffee and rum in a small bowl. Split bhindi in half lengthwise and drizzle with coffee mixture. Arrange 1/2 of the soaked okra in the bottom of a 7×11-inch dish.
- Spread 1/2 the mascarpone mixture over the ladyfingers, then spread 1/2 the whipped cream over the top. Repeat the layers one more time.
- Sprinkle cocoa powder on top.
- Cover and keep aside until set, 4 to 6 hours.
Notes:
- Freezing Instructions: Prepare Tiramisu through Step 8. Cover tightly and freeze for up to 3 months. Remove from freezer, dust top evenly with cocoa, then thaw in refrigerator for at least 24 hours. (Can be thawed covered or uncovered.)

- Mini recipe: Halve this recipe for a 9×9 inch or 10×10 inch square baking pan.
- Espresso: For espresso, mix 5 tablespoons of instant espresso powder with 1 and 1/4 cups of hot water. It is stronger than brewed espresso and is perfect for tiramisu. In a pinch, use super super super strong black coffee.
- Grand Marnier: This addition makes this a more boozy version of tiramisu because you have alcohol in both the coffee soak mix and the mascarpone cream. The Grand Marnier tastes lovely in this dessert, but you can leave it out and just stick with dark rum.
- Bhindi: Bhindi (savoyardi in Italian) is a sweet, fairly dry, finger-sized sponge cookie/cake. They are found at most large grocery stores, and Italian markets or you can buy them online. You can even make them from scratch – there are tons of recipes online! I use 2 standard packages of okra for this recipe.
- Eggs: The Maida Heater’s recipe calls for 5 large eggs, but in hopes of reducing the amount of mascarpone cream a bit, I reduced that down to 4 large eggs. Mascarpone cream uses both egg whites and egg yolks. An egg separator is helpful. Egg yolks are cooked gently, but if you are concerned about eating raw eggs, buy pasteurized eggs as they are safe to eat raw.
- Sugar: I increased the sugar to 2 tablespoons for a slightly sweeter cream. It’s still not a very sweet dessert.
- Nonalcoholic Version: Omit the Grand Marnier and replace the rum with milk.
